Holiday Leftovers

I really really really hate wasting food. Food costs way too much to waste. Unfortunately when you cook big meals, you are very likely to have a lot of leftovers. And if you have a lot of leftovers you have a greater chance of wasting food. In my house we can eat the same meal for three days max. Some of my closest friends do not even eat leftovers for more than one day. Now that is sad... but I cannot change them.

After three days, JT and I start looking at each other funny... the well, what are we going to eat look. Then the leftovers just get shoved to the back of the fridge. As I mentioned in a previous post, thankfully we did not have many leftovers for this Thanksgiving. I would say that only about 25% of the turkey was left. I asked JT if he could slice up the remaining portion of the turkey so I could make turkey salad tonight. I asked him to do it, because if it was left up to me, I would still be cutting it now... hours later. I am slow at that kind of thing in the kitchen.

I searched for a turkey salad recipe online, but nothing make me lick my lips and say oooh gotta get that. So I got creative in the kitchen. I diced the turkey and mixed the following ingredients: green onions, garlic powder, original Mrs. Dash, mayonnaise, sour cream, a little Worcester sauce and a dash of relish. I toasted two slices of some delicious Sara Lee bread and melted a slice of American cheese on the turkey salad. JT enjoyed the sandwich. I made a small batch just in case he would not like it. Now after I get some more green onions and sour cream, I can make a bigger batch tomorrow.

I am not sure if William and Keisha will like the turkey salad, but I know that JT and I will finish that off without any problem. I feel good about not wasting any food.

I remember when I was younger, getting creative with holiday leftovers such as turkey and dressing sandwiches topped with cranberry sauce.

Grilling Fish Ain't Easy

If the meal I am preparing does not involve chicken or some form of a recipe, I cannot guarantee that it will turn out right. Last night I prepared some grilled Alaskan White fish fillets on my George Foreman grill. I do not have the gigantic Foreman grill yet, I still have the baby grill that my Mama bought me while I was in college. At the store while buying the fish, I asked JT how to prepare it... he simply stated, to grill it on the Foreman.

Mmmkay...easier said that done I thought to myself.

The fish was already thawed because I left it out in the sink when we came home earlier in the afternoon. About a quarter to eight I turned on mini-Foreman.

I glanced in my cabinet and pondered over which spices I was going to experiment with. I grabbed trusty ole Mrs. Dash (the yellow classic one), lemon pepper mix and the garlic and herb mix. At first I slapped some Country Crock butter on the grill, but that did not turn out to well since that shit slid on down the gril right on into the grease pan... so then the light bulb went off in my head and I grabbed the Pam cooking spray. Voila! Surprisingly, the fish cooked must faster than I thought it would but then again the fillets were not that thick. I sprinkled the spices on each side but the lemon pepper one did not seem to turn out so swell. I sampled a piece of it and the taste was overwhelming so I reached over for the garlic and herb mix and proceeded to get my shake on. Silly me forgot that the holes on the garlic and herb mix were MUCH bigger than the lemon pepper mix. I had garlic and herb all over the fish, grill and counter. OOPS... A little spice never hurt anybody...I just scraped the excess off and called it a day.

My Left Foot

It only takes one little thing to change the entire mood of an evening. How did I know it was coming?

My evening was great until a few moments ago.

But let us rewind until this morning.

I woke up around 9am and called Nikki to go Party City to check out prices of bridal shower paraphernalia. Most of the day involved finishing up the bridal shower invitations and rushing them off to the post office. We made a few other stops along the way. I wanted to get a flag shirt at Old Navy, but they only had the ugly olive t-shirts left UGH.

After buying two books of stamps and mailing off the invitations, Nikki and I browsed around the mall for a bit. Dillards had a great clearance on some sandals, but of course they did not have my size!! I have been cursed with big feet. Well, size ten is not that big, but for a woman it is just not a common size. I thought I could get away with a size 9½ sandal then little did I know that my damn left foot is bigger than my right foot. WTF... yes my left heel hung way the fuck over the sandal compared to my right foot. I was truly flabergasted by this. So I threw a pair of Bass sandals and the salesman and said "how about these?" (Un)lucky me, they did not have those in my size either.

I am still trippin about my big left foot...

Anyway, Nikki found her a pair of sandals and I found a Nine West purse marked down from $59.99 to $14.75. I could not resist.

Real Macaroni

Last night, my boyfriend made us Real Macaroni. Elbow macaroni smothered with plenty of cheese

and baked in the oven. Oooh yes, it was quite delicious. Don't be jealous.

The little things in life please me.

We're still catching up on all the television shows I've taped in the last two months. The other

day we watched the series finale of X-Files. It explained a lot, but still left me with several

questions. I wouldn't be surprised if they make another X-Files movie.

Minority Report comes out this Friday; it should be pretty good.
