Last Wednesday night, I boiled the sweet potatoes, cut up the red, yellow and green peppers, green onions, carrots and cucumbers then placed them in a plastic container with Mrs. Dash and about two tablespoons of red wine. I let the vegetables marinate over night *yummy* I also baked the corn bread and cut up green onions and celery for the stuffing. I let JT cut up the yellow onions because I just cannot tolerate my eyes watering the entire time while cutting them. I realized I should have started all of this as soon as I got home that evening, instead of chatting online and doing other random stuff. So around 2am, I started getting REALLY tired. Meanwhile JT was preparing the turkey and defrosting the chicken wings. We both fell out at 3:30am… next thing I know it is 6ish and JT is making me get up. I am grumpy than a mug when I am awaken out of my sleep like that. Thankfully, JT is used to it and he was mighty patient with me while I struggled for about 15 minutes to wake up lol…
When I (somewhat) got my mind set together, I began preparing the stuffing. I dazed off several times as I crumbed the soft cornbread in my hands… then I poured the chicken broth, cut up celery and onions in and sprinkled a bunch of sage on the mix. JT and I sampled the results to make sure I had enough of everything… something was missing… SUGAR. I sprinkled some sugar in… I began to panic because I did not have enough aluminum baking pans (or so I thought at the time). I dug around for anything that would work and I found a bunch of new eight inch cake pans, and I had just enough for my sweet potatoes and stuffing which both used three cake pans. Stuffing and yams in a cake pan… ghetto I know, but hey it worked. While baking the stuffing, I began to clean up the apartment since Mama was coming over later. Then JT and I took turns, while I cooked, he cleaned and vice versa.
We were in a bit of a hurry since the Turkey Day game started at noon. I had called Mama earlier to let her know to be ready by 11am, but we probably would not arrive until later. JT cooked his famous chicken three ways: hot and spicy, curry and barbeque. I ran out of time to bake the cake, but I decided I would do that after the game. I mentioned this in a previous entry, that the two B teams were to play at Turkey Day. My silly brother said that there was not going to be hardly anyone at the game because two B teams were playing, instead of varsity. How funny that him and his knucklehead friends (except for Sam, cause I like him lol…) showed up at the game after we arrived. The game was cool, the weather was chilly… I was quite upset at JT for saying that I could get away with my light black jacket *ugh* Luckily, Mama supplied with a headband to keep my ears warm. For most of the game, Mama and I did not nothing but talk about everyone and they mama… it was hilarious!! We felt like two teenagers jonin on everybody.
Kirkwood, my alma mater, won the game and you know what… I am not even sure of the end score. It was 14-0 when we left near the end of the fourth quarter. The clouds began to get so dark that it appeared as if it was going to rain, so we decided to leave early considering that where we parked (Doughtery Lane and Doughtery Ferry) was no where near the football field off of Chopin. I even forgot to check the evening news to get a final score.
I baked a yellow cake with chocolate icing *drool* shortly after we arrived at home. I even added some vanilla extract in there *licks lips* I was ecstatic when I found out that Aunt Dot would be coming over too. While the cake baked, I finished preparing the salad, cooked the green beans, rolled up the Pillsbury croissant rolls, stuck them in the oven and steamed the brocolli, cauliflower and carrot mix. All throughout this, I kept dropping stuff and I nearly dropped the bowl with the cake mix. I was so exhausted that clumsiness took over. The funniest part was when I tried to open the cranberry sauce. I hear some people can eat their cranberry sauce scooped out of the can… but NO NO NO this is not how we eat it. I have to take the entire sauce out of the can, still in the canned shape. Then I cut the sauce into slices. Anyway, the way Ocean Spray has their cans made is that you cannot use a can opener on the top AND bottom. After JT and I struggled with the can for about five minutes, I looked at the can and saw some instructions… which said to use a flat knife to pull the sauce out of the can *Special Ed voice* YAY!! I felt so stupid, then again I was so tired that I was doing everything the hard way.
In the end… the meal turned out great. JT’s honey glazed turkey breast was *UNF* but you know what always happens when I cook… I did not eat that much at all (the first time around *giggles*). Whenever I go a long time without eating a whole meal and even worse when I cook and sample throughout the cooking, my appetite is little to none when I am done cooking.
Did not do a doggone thang on Saturday… *moving right along* Last night, JT and I watched the series finale of Carnivale and I would have to say that the season finale was the best episode of the entire (SHORT) season. The writers of Carnivale keep the biblical references rolling on in… I was surprised to see Management turn on the professor, but then again I was not surprised because it is obvious that Management is quite demonic, if not an avatar of the Devil himself.
